Huevos Rancheros

Ever had Huevos Rancheros? Literally translated as "ranch style eggs," this Mexican recipe becomes a favorite for all who try it!

Ingredients

  • 5 eggs
  • Refried beans
  • 5 tortillas
  • Ranchero sauce
  • Pico
  • Sriracha sour cream
  • Cheese
  • 4 tablespoons of oil

Instructions

  • Set out the Ranchero sauce, refried beans, pico, and sriracha sour cream in serving bowls.
  • Place a pan over medium high heat and add 2 tablespoons of oil, once hot add one tortilla and fry for 15-30 on one side then flip and do the same on the other. You want the edges to be nice and crispy, place on a paper towel lined plate and repeat until all tortillas are cooked.
  • In that same pan add a little more oil and fry your eggs, crack your eggs and add to the pan. For over easy/sunny side up eggs just leave them alone for 3-4 minutes in the pan.  For over hard eggs flip them at the 3-4 minute mark and cook for another 3 minutes.  Remove from the heat.
  • To assemble start with your crispy tortilla, spread some beans on it, leaving a little bit of an edge showing. Next add your Ranchero sauce, egg, drizzle with the sriracha sour cream, sprinkle with pico and cheese and enjoy.
