Pork Rind Chicken

 

Ingredients

  • 2 chicken breasts cut into strips
  • 1 bag of plain pork rinds, can use spicy or BBQ as well
  • 2 eggs, scrambled with a splash of water

*you can add different seasonings if you want, since the pork rinds are already salty you don’t need to add salt

Directions

  1. Preheat oven to 350 degrees F.
  2. In a gallon-sized Ziploc bag, crush pork rinds into crumbs using a rolling pin.
  3. In a small bowl, beat eggs, and mix in cream or milk.
  4. Sprinkle salt & pepper over both sides of chicken tenders.
  5. Dip each tender into egg mixture, then coat with crumbs. Place onto a parchment paper or foil lined baking sheet.
  6. After all tenders are on the baking sheet, spray the top of tenders with a little cooking spray for extra crispness.
  7. Place in the oven and bake at 350 degrees for about 25 minutes until cooked through.

 

Honey Mustard Sauce

Ingredients

  • 1/2 cup mayo
  • 2 tablespoons mustard
  • 2 tablespoons honey
  • 1/2 teaspoon paprika

Directions

Mix all ingredients together in a small bowl until well combined. Store in refrigerator until ready to use.

Homemade Ranch Dip

Ingredients

  • 2 TBSP dried parsley
  • 1 TBSP onion powder
  • 2 tsp dried chives
  • 2 tsp garlic powder
  • 1 tsp dill weed
  • 1 tsp salt
  • 1 tsp pepper
  • 16-oz container of sour cream

Directions

Mix all ingredients together in a small bowl until well combined. Store in refrigerator until ready to use.

 

Boom Boom Sauce

Ingredients

  • ¼ cup mayonnaise
  • 1 Tbsp ketchup
  • 1 Tbsp sweet chili sauce
  • 1 tsp garlic powder

Directions

Mix all ingredients together in a small bowl until well combined. Store in refrigerator until ready to use.

 

Comeback Sauce

Ingredients

  • 1/2 cup mayonnaise
  • 2 tbs. chili sauce (not the Thai kind)
  • 2 tbs. olive oil
  • 2 tbs. ketchup
  • 1 tbs. spicy mustard
  • 1 tbs. lemon juice
  • 1/4 tsp. Créole seasoning 
  • 1/4 tsp. garlic powder
  • 1/4 tsp. onion powder
  • Pinch of black pepper
  • Dash of hot sauce

Directions

Mix all ingredients together in a small bowl until well combined. Store in refrigerator until ready to use.
