Set out the Ranchero sauce, refried beans, pico, and sriracha sour cream in serving bowls.
Place a pan over medium high heat and add 2 tablespoons of oil, once hot add one tortilla and fry for 15-30 on one side then flip and do the same on the other. You want the edges to be nice and crispy, place on a paper towel lined plate and repeat until all tortillas are cooked.
In that same pan add a little more oil and fry your eggs, crack your eggs and add to the pan. For over easy/sunny side up eggs just leave them alone for 3-4 minutes in the pan. For over hard eggs flip them at the 3-4 minute mark and cook for another 3 minutes. Remove from the heat.
To assemble start with your crispy tortilla, spread some beans on it, leaving a little bit of an edge showing. Next add your Ranchero sauce, egg, drizzle with the sriracha sour cream, sprinkle with pico and cheese and enjoy.
